Australia’s dairy story runs deep — shaped by rolling pastures, small co-ops, and a legacy of butter and cheddar made for European markets. From Tasmania to Far North Queensland, dairies dotted the landscape, each with its own sense of community and purpose.

When Italian, Greek and other European migrants arrived through the 20th century, they brought their cheesemaking traditions with them — adding fetas, soft brie sytles, alpine styles and mozzarellas to our mix.

With the rise of centralised, corporate dairy and refrigerated transport, much of this heritage began to fade, but thankfully pioneers like Milawa Cheese, Nimbin Valley Dairy and co-ops like King Island Dairy held the line and kept regional cheesemaking alive.
