Nimbin Valley Dairy is a fifth-generation family farm on Bundjalung Country, where Paul and Kerry Wilson and their three sons turned to small-batch cheesemaking after the deregulation of the dairy industry in 2000. With roots in regenerative farming and inspiration from French and Italian traditions, their journey took off in 2007 when Paul received the Dairy Australia Cheesemaking Scholarship. Today, from their ridge-top farm with sweeping valley views, they craft award-winning cow and goat milk cheeses that carry a true sense of place.

Storage & Serving Tips
Store in the refrigerator and bring it to room temperature before serving to fully enjoy its creamy texture and flavours. Perfect for slicing or smearing on fresh bread or simple crackers. Serve with white wines, lighter reds or crisp lagers.
Aging Guide
- At 3-4 weeks: Enjoy a chalky texture with a mild, creamy taste
- At 5-8 weeks: Experience the perfect balance of creamy ooze and buttery richness
- 8+ weeks: The cheese becomes more intense with caramel notes; rind may soften
