Welcome to October and the warmth of spring.

This month we continue to shine a light on another small-batch cheesemaker in the Therapy Box: we travel to Gunaikurnai Country in Gippsland, where chemist-turned-cheesemaker Ferial Zekiman AM has led Maffra Cheese since 1991. Using milk from her Holstein-Friesian herd, Ferial crafts award-winning cloth-ashed cheddars. She was also honoured with the Order of Australia in 2016 for her contribution to cheesemaking - this woman knows her cheese!

Maffra Cloth-Ashed Cheddar is wrapped in cloth and dusted with ash, then matured for 15–24 months into a firm yet crumbly wheel. Sweet, grassy notes deepen into nutty, earthy richness — a true taste of Gippsland.
