In 2009, Venezuelan-born vets Genaro Velasquez and Rosselyn Escalante sought a new life in Australia for their family, swapping the city for greener pastures on Palawa Country in north-west Tasmania. After several years dairy farming β€” and a Fonterra Sharefarmer of the Year award β€” they founded La Cantara Artisan CheeseΒ in 2019.

On their Edith Creek dairy, they craft small-batch cheeses inspired by Venezuelan traditions using milk from their own cows. From silky Queso de Mano to wine-washed Tom al Vino, each wheel is shaped by science, heritage, a love for their animals and respect for the land β€” all bound by a deep gratitude for their new home.
