Welcome to February. High summer, long days, green paddocks, orchards groaning with fruit, and milk at its most generous. This is the moment cheeses wait for all year.

This month’s feature cheese is Bluestone by Long Paddock Cheese, made on Djadjawurung Country in central Victoria.

While many modern blues lean soft and spoonable, Bluestone holds its shape, dense and buttery near the rind, chalkier and gently crumbly through the centre. It’s balanced, savoury, and deeply satisfying.

Blue cheese loves something sweet alongside it, which makes late summer its natural home. Think ripe figs, sticky apricots, peaches so juicy they drip down your wrist. A little sweetness, a little salt, and suddenly everything makes sense.

February’s Therapy Box also includes:

Pickled Baby Figs | On the Side 🍈

Tiny figs with that perfect sweet and tangy balance, cooked with brown sugar, apple cider vinegar and thyme. Made to elevate a cheese board and especially good with blue cheese and charcuterie. 

Native Salami | Salumi Australia 🌿

Free range Australian pork cured in the Italian tradition, then lifted with native aniseed myrtle and mountain pepper. Fragrant, gently peppery, and made for grazing. Slice it thin and let it do its thing alongside cheese, crackers, and summer fruit.

Quince Paste | Ugly Duck Fine Foods 🍐

A soft set quince paste that spreads easily (no broken crackers). Subtly sweet and beautifully balanced, it pairs with just about any cheese, adding rich fruit depth.
