The December Therapy Box - A Celebration of Australia

Welcome to December and the start of summer – and the final Therapy Box for the year.

To celebrate, we’re shining the spotlight on Nimbin Valley Dairy and one of the great cheeses of warm weather: halloumi. As a little Christmas thank you, we’ve turned the volume up with two versions of it in this month’s box.

You’ll find traditional Nimbin Valley halloumi alongside a chilli-garlic halloumi – both made on farm from fresh milk, with that classic squeak and gentle saltiness that loves a hot pan or grill. Halloumi might have started life in the Mediterranean, but it was absolutely made for an Australian summer: BBQs, afternoon drinks, poolside snacks… it just works.

Inside December’s box you’ll also find two simple ways to put it to work, with recipes for:

• Crispy halloumi fingers – golden, crunchy and perfect with a cold beer.
• Chilli-garlic halloumi green paw paw salad – a little more effort, but a true show-stopper on your Christmas table.
