Nimbin Valley Dairy is a fifth-generation family farm on Bundjalung Country, where Paul and Kerry Wilson and their three sons turned to small-batch cheesemaking after the deregulation of the dairy industry in 2000. With roots in regenerative farming and inspiration from French and Italian traditions, their journey took off in 2007 when Paul received the Dairy Australia Cheesemaking Scholarship. Today, from their ridge-top farm with sweeping valley views, they craft award-winning cow and goat milk cheeses that carry a true sense of place.

Sweet Goat is crafted from pure goat’s milk to create a smooth, semi-hard cheese with a delicate natural sweetness. Its clean milk flavours and nuttinness lead to a satifying savoury finish. Celebrated for its versatility, Sweet Goat shines spread on simple crackers, and on a cheeseboard with lighter reds and fuller flavoured whites. However you enjoy it, this cheese is a reminder that sometimes the simplest flavours are the most memorable.
Storage & Serving Tips
Store in the refrigerator and bring it to room temperature before serving to fully enjoy its creamy texture and flavours. Perfect for slicing or smearing on fresh bread or simple crackers. Serve with white wines, lighter reds or crisp lagers.
