Crafted from 70% wild-hunted Granite Belt venison and 30% rich pork fat, this salami blends the rugged beauty of the bush with a fragrant botanical twist. Juniper, coriander, strawberry gum — it’s herbaceous, perfumed, and just a little bit wild.

Squid Ink & Black Truffle Salami
Made with 100% Australian pork — hand-cut fat, whole muscle, and just the right hit of Italian squid ink and black truffle — this salami is bold, brooding, and beautifully hung for 3 to 4 months.
Slice it thinly, and let it warm to bring the flavours alive. Deep, earthy, umami-rich — this is salumi in high definition. Delicious with any perfectly ripe white-mould cheese.

Born from a craving for old-world salumi with bold, modern flavour, Saison Smallgoods is the passion project of chef Damon Porter and the Dalton family. Based in an old small goods factory in Brisbane, this humble trio crafts well-hung meats with flair, purpose, and a delicious refusal to be generic.

We pride ourselves on making 95% of deliveries by refrigerated courier, ensuring that your cheese and other deli goods remain chillled during transit. Please note that because the journey takes a few days extra no ice bricks are included in the package.

For harder-to-reach areas, delivery is by AusPost Express. All orders are packed in insulated packaging, designed to keep your cheese cool and fresh in transit.
