Made with 100% Australian pork — hand-cut fat, whole muscle, and just the right hit of Italian squid ink and black truffle — this salami is bold, brooding, and beautifully hung for 3 to 4 months.
Slice it thinly, and let it warm to bring the flavours alive. Deep, earthy, umami-rich — this is salumi in high definition. Delicious with any perfectly ripe white-mould cheese.
Wild Kangaroo & Anise Myrtle Salami
Crafted with 70% wild eastern grey kangaroo from Queensland’s Granite Belt, balanced with native anise myrtle and enriched with 30% pork fat for that luscious, silky generosity every salumi needs.
Slice it thinly, let it breathe, and savour its herbaceous lift and gamey depth. Versatile and refined, it sings alongside dark fruits and pairs beautifully with bold, earthy cheeses.

Born from a craving for old-world salumi with bold, modern flavour, Saison Smallgoods is the passion project of chef Damon Porter and the Dalton family. Based in an old small goods factory in Brisbane, this humble trio crafts well-hung meats with flair, purpose, and a delicious refusal to be generic.
