Centuries ago, Spanish monks would wash wheels of cheese in wine while reciting their daily prayers — a quiet, mindful ritual that transformed simple milk into something extraordinary. Inspired by that tradition, Tom al Vino is soaked and gently washed in local red wine throughout its two-month ageing. The result is a cheese that’s slightly sweet, fruit-kissed & nutty, and wrapped in a striking rind that whispers of local Pinot Noir.
